SAPA is known as much for their naturally leavened breads as for their delectable pastries. Founder Dina Weber has worked in a French bakery in Goa and created a signature sourdough starter while working as a pastry chef in a cafe in Ladakh. Since then, it has travelled quite a bit with her. It went with her to Germany where she experimented with it and milled it to discover better flavors in regional grains. Their specials include the carrot seed loaf, ciabatta, baguette, and soft milk bread. And their mouth-watering range of pastries include cinnamon buns, chocolate babka, nut rolls, eclairs, macarons, tarts, and mini mousse cakes. Stollen, traditional German bread, topped with dry fruits soaked in rum is a Christmas special served here.
