Recipe by Chef Larry Paul, Corporate Chef, British Brewing Company
Ingredients- Half apple Juice from half lemon Green Lettuce 120gms Red Onion ¼ Dried Cranberries 25gms Feta Cheese/ Goat Cheese 2 Tbsp Butter 30 gms Walnut 100 gms White Sugar 40gms Pomegranate 10gms
For Dressing Apple Cider Vinegar 2 Tbsp Olive Oil 4 Tbsp Djon Mustard 1.5 Tsp Sugar 1.5 Tsp Salt ½ Tsp
Method
Heat butter in a pan once it's melted, add in the sugar and let the sugar. Add in the walnuts and mix well to coat over a slow flame. Once coated, remove the mixture from the flame and spread it over a plate to cool. After it's cooled, take half of the portion and roughly chop, leaving the remaining intact.
Cut a thin slice of the apple and squeeze the lemon over it, so it does not discolour the fruit. Also, cut the onions into thin slices.
Simultaneously put the berries in a bowl, pour in hot water, and leave it to absorb for 10 min later, drain off the water.
For the dressing Add all dressing ingredients together and shake well.
Making the salad
In a bowl, add the washed and clean lettuce, half of the walnut amount, half of the apple, and all the onion. Drizzle the dressing over it and fold it together. Portion it into a salad bowl, top it with the remaining apple slices and chopped walnut and drizzle the remaining dressing.
Finish it with feta or goat cheese, as preferred and the pomegranate.
