If you&rsquove been on the lookout for some palate-pleasing tapas food, Latina cocktails you&rsquore in for a treat. Chef Victor Manuel Murguia Mancilla and Chef Darius Madon are all set to bring the flavours from that part of the world to Mumbai with Binge. Drawing from the philosophy of fun-dine, like its mothership, Bastian, yet offering a distinct F&B experience the venue identifies as a breath of fresh air to the city&rsquos new-age dining landscape.

Menu Highlights
With a focus on fresh ingredients, South American spices, and tacos of all kinds, the Binge menu offers the perfect amalgamation of classic favorites and contemporary flavours. While you narrow down options in the impossible-to-choose-from menu, nibble on some Esquites, a warm corn salad or Pomelo Salad, made using hydroponic arugula and mixed lettuce, pomelo, sliced almonds, cucumber, beetroot, soya honey and vinaigrette. Take it to the next level with some munchies for the table that include options like Chicken Karaage, sliced crispy marinated butterfly breast of chicken served on a bed of Asian-dressed salad leaves. Tiraditos &ndash Pomfret or Tenderloin, pico de gallo, avocado mousse, chipotle ponzu, microgreens. Croquettes with Edamame Truffle or Serrano Ham or opt for Salmon Rolls that consist of Sushi grade Salmon tartar rolled in salmon sheets in a truffle ponzu sauce.
When a chef&rsquos addictive tacos are the talk of the town, you simply can&rsquot do without ordering some at Binge. Fish and seafood fans can opt for the Baja Cauliflower or Fish, beer batter, avocado mousse, pico de gallo, animal cabbage, roasted tomato salsa. Meat lovers can have a feast with options like the Jackfruit Tinga, shredded jackfruit, tomato, onion, chipotle, lettuce, sour cream and salsa. Carnitas, confit pork leg, shoulder, and skin, pico de gallo, salsa cruda, chicharrones or Birria Lamb marinated shredded lamb served with birria stock. Vegetarians can look forward to several taco options like the Mixed Mushroom Taco &ndash mixed mushrooms, garlic and butter, cheese chicharron, roasted pumpkin seed and Spinach Taco with shimeji mushroom, jalapeno, corn, feta cheese, pickled onions, crispy kale on handmade tortillas or Birria Lamb, pulled & shredded lamb served with birria stock, chopped onion, coriander, chipotle salsa and cabbage.
For the truly hungry, the menu offers hearty Binge favourites like the Crab Ceviche - crab with tomato concasse, jalapeños, spring onion and lemon juice Tostada Bowl, a choice of Salmon or Tuna tartare, is tossed with truf­e soy sauce and served with twisted corn tostadas Guerrero Prawn Cocktail, a Mexican cocktail sauce, prawns, Pico de gallo, avocado slices, cucumber Tenderloin Slider with tomato, lettuce, onion, pickled cucumber Serrano Ham Montadito, Homemade baguette rubbed with roasted garlic, crushed tomato with thin slices of serrano ham and parmesan.
Bar Highlights
To make it a complete fiesta, a well-stocked bar is in play at Binge. Mixologist John Leese and All India Bar Wars Champion Krishna Murthy gets all the Latin-inspired cocktails packed in a real punch - the drinks are a mélange of indulgent flavors or light and fruity or spicy.
One can even opt for a Binge-Gin Mule with fresh pineapple, chili flakes, lime juice shaken with simple syrup, gin and topped up with ginger beer or go for some homemade gems like Ring My Bell Pepper with Absolut, green and red bell peppers slices shaken with mint lemon juice and peach syrup or a Sangritini, El Jimador Blanco, lime and orange juices, green chili, grenadine and tomato juice stirred and laced with drops of coriander oil. Opt for options like Crudo Killer, Beefeater gin, cucumber, jalapeno, coriander leaves, lemon juice and simple syrup, topped with soda water Binge Tropicana, Absolut vodka, homemade melon liqueur shaken with mango puree and cranberry juice and more.
Desserts
Bastian is known to woo patrons with its decadent desserts. With Binge they take it a step further. Indulge in the classic-comfort desserts by Chef Dhiraj Jankar. Desserts like Crème Brûlée - baked vanilla custard, caramelised sugar, seasonal fruits, pomegranate and mini leaves or Stuffed Donuts - donut holes, hazelnut mousse, lotus spread, caramel, garnished with hazelnut crunch, lotus crumble, candied nuts caramel sauce, and chocolate ganache or opt for options like Petit Chocolate Pancakes, Tres Leches, Binge Strawberry Cake and more.
The Space
Joining this is Minal Chopra, who has taken up Binge as her second restaurant project, after designing Bastian Worli. She has brought her signature style to the 35- seater, indoor-outdoor space with key features such as a vertical herb garden, statement pieces, delicate lighting filled with hues of ecru, cream, and beige lined with fiolage and cacti to create an effect reminiscent of a Latin American home.
Binge is supplemented with macrame and tassels on the cluster of lamps inside, and the umbrellas are al fresco. There's rattan on the chairs, and cacti along the walls. However, unlike Bastian Worli, Binge is designed to create a comfortable, cosy feel away from the hustle and bustle of the city, while still being located in the heart of Mumbai, bringing in natural light, alongside an abundance of space packed with greens to keep it fresh and inviting.
With Binge, Chef Victor has gone the extra mile to bring the feeling and flavours of his home to Mumbai. The vibe is warm, and the doors are open &ndash now all you need to do is head over, raise your glass and say &lsquosalud&rsquo
